Cast iron in the stove during the warm up to 450. Place pan on burner over med-hi and put down some beef tallow. Sear for 30 seconds, flip another 30 seconds then into the oven for 3-4 min. Remve and flip then back in until its cooked the way you like it.

I almost bought one of his ash trays a while back. He’s incredibly talented! I’d say if I see one pop up for sale again he’ll have my money.If you must spend outrageous money on a cast iron skillet, at least buy a hand forged one from Riley Kirkpatrick at Kirkpatrick forge.
