Moose Tongue Curry

So I can't take much credit for this one, but I still wanted to share. My dear friend and coworker takes all the animal tongues we are willing to haul out of the field, and cooks up incredibly tasty dishes! For lunch at the hospital today she did a Thai style coconut curry with moose tongue, potatoes and green beans...not something I would have ever dreamed I would like, but it was really awesome and I feel great about being able to use even more of the animals we harvest!

You really should do a cook book. Other than ground meat my wife never sees the true potential of my harvest.

I just finished up some Elk roast barbacoa. With cilantro lime rice, and some pico de gallo I threw together. Topped with some queso fresco and wrapped in a warm flour tortilla. Yum!

Yeah... Lingua is amazing! Most people are revolted at the thought of eating it. Well, I was introduced to Lingua (tongue) or however you spell it in spanish by a friend of mine who is from Mexico. Its awesome if you can get over the fact that its a tongue.

Easiest Crock Pot Roast Ever!

Honestly, this is the easiest and tastiest meal I have ever made. I put a moose roast in the crock pot at noon today (still frozen), and added a packet of onion soup mix and poured one cup of red wine over the the top. Cooked on low for 6 hours, served with Parmesan risotto (or "cheesy rice" as Luke calls it) and sautéed spinach and peppers....

Baked Corndogs and Breakfast Burritos

We had a bunch of amazing jalapeño cheddar caribou dogs made last fall, and I have been dying to find a way to turn them into corndogs without deep frying them. My first attempt at baked corndogs, while edible (and ok... Pretty tasty) felt apart, made a mess, and were too ugly for me to post here. The problem is in getting the cornbread to stick to the hotdog during baking without sliding off. This week I found a mini loaf pan that is the perfect size and shape for half a hotdog, with enough room left over for the cornbread too.

They came out looking a little like corndog ice cream bars, but at least the cornmeal stays wrapped around the hotdog now. Luke is away at work, so I had my dad do some sampling and he was a big fan. I froze the rest of the batch (I made 16 total) to reheat individually when we want them.

I am trying to get a lot of meals made ahead in the freezer before our life gets chaotic this spring/summer/fall. I mixed up the filling for a double batch of breakfast burritos with venison breakfast sausage, diced onions and peppers, scrambled eggs and a little cheese. I wrapped each burrito individually in foil and then froze them in a gallon freezer bag. They can be thawed and reheated in the foil on the camp stove, or microwaved (sans foil) if we want to enjoy them at home :)

I am planning to get a bunch more meals cooked and frozen for an upcoming 6 day bear hunt as well, and will try to remember to post pictures and ideas as the meal plan comes together. I am also continuing to write up the recipes I use for inclusion in the rokslide cookbook...

My family only eats venison, we almost never buy meat.

Rodney, those look awesome! Are they battered and fried like you would with fried chicken, or some other way?

We try not to buy any animal protein at all (except dairy products I suppose) that we didn't bring home ourselves. Between game meat and fish I'd say we eat ok :) My main challenge with this has been for meals when we get home late and are in a hurry-- I have occasionally bought frozen stuff to keep on hand for "dinner emgencies" (frozen pizzas, ravioli, mini egg rolls, potstickers, etc ), but have been trying to move towards having things in the freezer that I made myself. Doing it myself is cheaper, gives me another use for our game meat, the food tastes better homemade, and I know exactly what went into it!

Ground Goat Philly Cheesesteaks

Here's another one I made to freeze for the upcoming bear hunt. Philly cheese steaks made with ground goat meat. I made one for myself for dinner....

The rest of the meat mixture (meat, onion, peppers and sauce) I vacuum sealed and froze. At camp I will reheat the meat, and then spoon it into toasted rolls and add the cheese...cushy camp food made easy!

And those cliff hanging cheese steak sandwhiches.....OMG!

The snow finally disappeared from my yard so I celebrated yesterday with a nice smoked chunk of farm raised cow (beef brisket)....Smoking season is upon me and although my wild game stash is dismal, there are plenty other critters to cook. I am doing chicken on Saturday and putting in a pork butt late saturday night to finish up on Sunday.
