Venison Heart - Recipes?

For those that like venison heart, what are your favorite recipes?

Mine has always been slice, coat with flour and fry in butter.

Actually, I haven’t been keeping the heart (ashamed) but I saw Lampers was eating the stuff and figured I’d make an effort to try it this year.

So I kept the heart and the butcher sliced it up for me and I just did what you said: simple flour and salt and pepper. Then I turned it into a sandwich on whole wheat bread with arugula. Couldn’t find a dang onion in this entire house. And put A1 on it as well.

It was much more tender than what I thought it would be. To think I let all those hearts go to waste over the years. Won’t be doing that anymore . Thanks for the recipe.

I've been making heart tartare out of the last couple I've had. It's really good on toast or as a dip with tortilla chips.

I like to slice it and cut out the lining of the big vessels, then I usually cut it up into small pieces and make tacos. I always feed it to family and friends and they absolutely love it. Never tell them what it is though. Tastes just like steak and has the slightest liver texture but not enough to not get by as a piece of tenderloin

My wife cooked the heart from my buck that I killed over the weekend. Now we remember why we dont eat deer heart. lol

I cut mine like pictured (sliced with the hole in the center) and fried it up. Kids liked it and asked what it was. I told them it was deer ***hole. They just stopped and looked at me. I assured them I rinsed it out well before I sliced it up.
Years later they figured it out and now ask for ***hole when they see me saving the hearts.

Was going to try a few of the suggested recipes here this year but I have a problem my deer didn’t have much of a heart left strange thing there

I trimmed up my most recent elk heart, cut it to lay flat in two pieces, and threw it on the smoker for a couple hours.

I sliced the heart into long strips, about 1" wide and fried in butter.

The rest of the butter and heart juice was soaked up with some leftover wild rice, sauteed in the hot pan.

Pretty delicious.

Years back when we hunted WVa. The first camp meal of the evening after the first day was deer liver with fried onions home fried sliced potatoes all smothered in pan dripping gravy, pickled ramps sour dough bread with home made rubarb strawberry jam, our camp cook was great but most of them old boys are now chasing deer of past years in a place better than here I hope. I will try soon to dirt nap another one but I am pretty sure he’s going to have a hole in his heart.

Not a chance.
I HAD to eat liver and onions as a kid.
Now I have a choice not to ;)
gotcha man, strangley enough I like a (well done) liver & onion meal once in a while. Can't eat it too often or it starts to freak me out.;)
