If a cow has a .243 minimum, a big steer would be at least that.

Did it taste good? I've heard cows like that taste like shit. My buddy donated one after declaring it inedible.

We've been fortunate enough to get one every other year or so. The free range, grass fed cows are tougher than shoe leather (even the inner loins).

We grind most of it but I steak everything that is steak-able, cube it 2x (at 90 degree angle to each other) vac seal each steak and toss it in garage refrigerator for 10-12 days to age and it comes out pretty good.

Most of the cows we have gotten are about 500-700# on the hoof and generate 225-300# of boneless meat.

Funniest one was a shy one and wouldn't let us get within 150 yds - 150 gr 3006 to head. Heard the whap when bullet hit, cow just stands there for like 5 seconds, arches back, sticks out tongue and drops. Have whacked em in the head with 357 mag, 350 legend, and 3006 - they always start kicking after the initial shock wears off, it is a great way to bleed them.
