Since reading this, I had the opportunity to slow cook shanks, and shoulders twice now, simply amazing! Can’t believe this awesome solution got by me for so many years.
Just as impressed is the wife, who helps process venison, and ends up with the tedious task of the de-silver-skinning those parts.
The second batch was just a simple seasoned slow roast over onions and broth, served on a hard roll with giardiniera and melted provolone. Life is good!
