Whole Roasted Venison Shoulder

Since reading this, I had the opportunity to slow cook shanks, and shoulders twice now, simply amazing! Can’t believe this awesome solution got by me for so many years.

Just as impressed is the wife, who helps process venison, and ends up with the tedious task of the de-silver-skinning those parts.

The second batch was just a simple seasoned slow roast over onions and broth, served on a hard roll with giardiniera and melted provolone. Life is good!
 
Necks are even better like this.
I split necks in half length wise, smoke for 3 hours at 200 then into the pressure cooker for 45 minutes. Once cool shred and do whatever with it. One favorite for cold days, is to mix a lot of the meat into your favorite mashed potatoes. It’s hardy and amazing.

Just did a neck in the slow cooker with just a jar of Birria and made tacos and it was great.

A whole shoulder done Barbacoa style is good too.

I did two deer shoulders this week with the recipe in my first post and also 2 batches of birria made with neck meat and shanks/hocks. Bagged it up and put it in the freezer. When I’m going into the backcountry I’ll pack these ready-to-eat packages instead of freeze dried food. Heavier for sure but, So much more pleasant to eat and much easier to pass through the digestive system 😅. My go-to hunting meal is some cooked venison and white rice.

What is your "jar of Birria"? I can never get mine to taste right, if this is a pre-made jar I would like to buy some.

I took a slab of neck out last night for the same purpose.


Bone-in shoulders have been a staple for a few years at our house since deer/elk flatirons aren't really worth breaking out.
