Looks great Becca.. I do something similar.. I also marinate the venison in Italian dressing and lots of garlic, then cook and serve on a roll with grilled onions and peppers...

I might try grilling the peppers on the next go round if time allows...they held up fine, but I sure love grilled peppers :) I like slow cooking the onions with the meat because they add so much flavor. Gotta love a meal I put in the crock pot at 9 am, and then didn't pay further attention to until 5:30pm :)

Ryan, the salad was my nod towards trying to have something healthy on our plates. Besides, it wasn't clear whether the fries would be edible, since Luke ended up cooking them :)

Becca, I too love my crock pot meals... Speaking of sandwiches, I like to sometimes make Italian pulled beef sandwiches in my crock pot.. Put in a chunk of beef (about any game meat would be good as well) along with (1) Good seasonings brand dry Italian dressing pack and juice from (1) jar of pepperoncini's... I like to top off the sandwich with sauteed bell peppers, garlic and onions... Good stuff..

Potatoes stuffed with Jalapeño Cheddar Caribou Sausage and Broccoli

Our game processor made some really incredible jalapeño cheese hotdogswith half of one of the caribou we got last season.

In the past we have grilled them, or roasted them over the campfire. Tonight I used them in stuffed potatoes with broccoli and cheese.

Baked the potatoes, and scooped out the insides and mixed them with a little sour cream in the stand up mixer. Meanwhile, I sautéed the diced sausage with onions, and then added that and some steamed broccoli to the mashed potatoes. Returned the mixture to the potato skins and added some shredded cheese.

Broiled until the cheese was melted, another tasty dinner that was ready in a hurry! These would have made great leftovers for lunch if we hadn't eaten them all...

I have to say that this has been one of my favorite threads!!! I agree with LES that I think you are trying to run things in a little :) :) I love your pics!!!

I agree! I thought I had some great wild game recipes until I saw all of Becca's amazing ideas! Keep it up....I love learning new ways to use our meat!

Caribou Lasagna

I just finished up a caribou lasagna...yum, yum.
Too funny, we had caribou lasagna tonight too! We are almost out of Italian sausage from last season, and will surely try to make some more if we are lucky enough to connect on 'bou again this year.

My favorite thing about lasagna is that they freeze so well. I made two of these over a month ago, and gave the other one to some friends who just had a baby. We had company over tonight, and I popped this in the oven still frozen, made a quick salad and dinner was done for four adults and three kids. Needless to say, there was only one piece left over :)

Is that plastic in the Cock Pot some way of keeping the pot clean? Grill it with oil and black pepper repeat repeat repeat. I need to expand my ideas:cool:

Yes Rick, that plastic is the best invention ever, the Reynolds Crock Pot liner. They are on the same aisle as the oven bags, and make cleaning the crockpot so easy! No more cooked on food....I buy them by the case :)

We had deer cheeseburgers again last night, complete with sauteed mushrooms, melted swiss cheese, fresh tomato, onion, lettuce, and topped with a hint of chilli sauce....you just can't beat a wild game burger! We find it so funny that when people eat our burgers they love them, but claim that they refuse to eat deer because of the "gamey" flavor.:confused:

Sounds great, Rebecca! I sometimes feel bad, but I don't always tell people what type of meat I am serving when they come over. They are often surprised to find out that they like wild game! I don't now if it's the idea that bothers them (which is shouldn't...anyone who knows anything about commercial beef or poultry processing plants would be seriously grossed out) of just a preconceived notion, but amongst our friends are several converts :)

My wife already had mexican food in the works, so looks like I'm on for tomorrow. I'm thinking about marinading some elk steaks, and making some steak sandwiches on toasted hoagies (you guys gave me an idea). My wife minces fresh garlic and mixes it with mayonaise, incredible. Now I need to figure out what marinade to use and decide if I am going to grill the steaks, or use the crock pot.
