Pricey new custom string improperly installed by shop... should I insist on replacing the string or just have the shop twist the string?

A lot of things could have happened here. It could have been just fine when you picked it up.
You put it in a case in your Truck on the ride home or in the back seat or whatever and it warms up and it rotates. Happens a lot.
Did you draw it back any after the tech handed it to you? To check for peep height check or anything? If so then it rotated.
There could be another dozen answers. If you drew the bow back and it didn't derail, blow the cams off then it was installed correctly.
I havw had a ton of different strings installed over the years. Some by me some by a shop and they all stretch to some degree.
A brand new bow will do the same thing when you buy it off thr shelf. It's normal.
Shoot it for an hour or so and have them twist rhe string to get the peep correct. Then shoot it again. It might take a time or two to get it lined out.
