Anyone gone down this path from a beginner's point of view? The easy part was a bit of research for what gear to consider (very little of which I admit is needed). But where should I start - type, process, etc.? French and T55 flour? Something else? (Score on the gear side. My daughter was a baker when she was a kid, so we've got a Kitchen Aid mixer. It's pink.)
