Homemade bread

Anyone gone down this path from a beginner's point of view? The easy part was a bit of research for what gear to consider (very little of which I admit is needed). But where should I start - type, process, etc.? French and T55 flour? Something else? (Score on the gear side. My daughter was a baker when she was a kid, so we've got a Kitchen Aid mixer. It's pink.)
 
My wife is all into the sourdough breads the last 12 months. Seems to be the new fad but I’m not complaining
 
I know this is going to go so wrong on the home front. "Why do you have a stone in the oven?"
 
I haven't purchased bread in eight years. I do sourdough, basic bread and enriched. Even make my own crackers.

Yeast, flour, water, and some sugar and salt to enhance flavor. Just go from there. Simple bread using instant yeast is pretty much goof proof. Getting the moisture content right is the challenge. It's the difference between a good bread and a great one. Kneading is another, but I don't lose sleep over it. I just use a kitchenaide mixer. There is nothing better than homemade bread. And it's so cheap to do.
