Grateful Dead has a ton of blues influence and their sound changes over the years, so you can always discover new gems.
I love the Dead. But my favorite is the old pigpen stuff. This Easy Wind is very bluesy.

I had the great experience of seeing Buddy Guy, BB King, amd Al Green at redrocks in 2010. I was probably the youngest guy there that wasn't dragged to it by his parents. It was an awesome show! On a side note, I saw Tenacious D there in maybe 2012 and Jack Black needed oxygen during the performance. None of those 3 old dudes did.

Walter Trout cooks on some guitar shredding blues, haven't seen him mentioned here yet. Skynyrd has some good blues inspired things throughout... but you knew that already! Lots of good blues out there. And blues-adjacent artists

In no particular order:
Derek Trucks
Gov't Mule (Warren Haynes)
John Mayer (JM Trio is the stuff)
Albert King (no SRV without AK)
John Lee Hooker
Howlin' Wolf
Muddy Waters
Gary Moore
Ray Charles
Josh Smith (he crosses over to jazz and fusion pretty freely, but monster player)
Taj Mahal
Walter Trout (he's pretty SRV influenced, I'd say)
Early Led Zep is really blues based
Cream
Jeff Beck
Mike Bloomfield
Later Doors (LA Woman and Morrison Hotel have some great blues on it)
Elmore James

I dig all sorts of blues and a lot of my favorite artists have been mentioned.

One that I didn't see is Stinky Lou and the Goon Mat. Boogie blues style, based in Belgium but serious old school southern US blues.

They are on Voodoo Rhythm Records. One of the guys who plays with them runs a blues bar in Liege, Belgium that I went to once. It might be the current world capital for that style of blues and the people who go to shows there are wild for it.

As a young guitarist I like John Mayer’s continuum album and Eric Johnson for some blues influenced music
