Go to sausage recipes

I’m taking on the endeavor of making sausage next week. Anyone have any go to pepperoni recipes they would share ? I have 175 lbs of grind meat to grind. I’m doing burger, pepperoni and polish sausage. Pepperoni will be a first for me. I found a jalopeno cheddar that I am going to try with 40 lbs. I’ll do a 80-20 mix with pork shoulder for all the sausage.
 
The author of the book used for this recipe is pretty much the grand master. I’ve not made this recipe but pretty much all of his recipes that I’ve made have been successes.
 
I used to make all my own seasoning but anymore it’s tough to beat Eldon’s seasoning. His book is pretty good if you’re wanting to make you’re own.

We did a couple of small batches of pepperoni for the first time last year. Turned out pretty good. Just used the LEM. Felt it was a tick mild so added a little red pepper. There are probably better out there and we are looking to explore options as well but the LEM was certainly not bad

So funny enough I actually took my elk to Duncan Henry for butchering. I can say his recipes and work is amazing. So I assume if you follow his recipe it will taste great.
 
I'll also add skip the collagen casing and get sheep casing. They are kind of a pain to work with but so much better.
