Goose sausage feedback

I do goose sausage using the Hank Shaw Hot Italian recipe. It's great, just need to make sure to add enough pork fat. Great stuffed in casings or in the ground meat bags we put it in all sorts of recipes. I've never mixed with venison or elk, those I just eat ground meat
 
We use all goose breasts cut into chunks and my wife makes stir fry with vegetables and rice. Its delicious

Hank Shaw is now my new Rytek Kutas.
 
I’ve had it mixed with pork and it was OK but I wouldn’t want to make a steady diet of it. Don’t think my palate would appreciate mixing it with deer. Mixing too many wild (gamey) flavors together just doesn’t sound appealing.
