Homemade peperoni. What is your go to recipe or kit?

Been out of the making my own pepperoni and sausage game for quite a while. Found a great recipe on Meat church for jalapeno cheddar smokies. Also want to make some peperoni sticks as well. Game meat or beef/pork recipes all welcome. Do you guys use the pre made Hi mountain kits or do you have any good from scratch recipes?

I have tried a half dozen different ones and prefer Let's Make Sausage's using pork for the fat and whatever sort of venison I have on hand. I know I have used whitetail, muley, and caribou to make it. Probably antelope also.

Mostly use it for pizza but it is good on its own.

I don't / wouldn't use a kit for anything. For me the prepackaged spices always disappoint and I have made enough stuff to look at a recipe and know whether it will fit my taste enough to give it a try versus open a box and be surprised at the ingredients / proportions.
