Pack of fajita seasoning, simple as that. I’ve done turkey pastor with the pineapple which is really good, but takes some effort. Bell pepper, onion, fajita seasoning on everything—very easy and good.
 
Beat with a hammer, panko, and air fry with what ever seasoning you like. I usually dip in honey mustard
 
If the goal is to feed picky eaters it's hard to beat breading and frying with dipping sauces.

My favorite though is to brine and smoke the breasts whole, brushing honey on several times throughout. Hank Shaw has good instructions for this. Then serve hot or cold with crackers and cream cheese that is smothered in a spicy jelly. I'll save that as an appetizer for Thanksgiving and it disappears quickly every time.

The legs and thighs are more challenging and I like to braise them for homemade turkey noodle soup or other stews.
 
We've grown fond of balsamic turkey & bacon bites. Marinaded chunks of turkey in balsamic and rosemary, wrapped in bacon and done on the flat top. Finding a thinner bacon helps make sure it gets cooked through on the sides, worth a shot! The kids call 'em turkey tots
 
Marinate whole skinless breast in 1/4 cup soy sauce and 2-3 tbl spoons honey for a cpl hours +
air fry at 380 for 15 minutes, flip and pull when internal temp hits 160-165
Let rest for a bit, slice and I serve with cranberry. Not tough or dry at all.
I do skinless chicken thighs the same way.
 
We've taken to letting them sit in Italian dressing in the fridge for 2-3 days. Then freeze it in the dressing. Bread in Andy's, fry, wrastle for the last piece.

Have done butterflied breast filled with cream cheese, wrapped in bacon, thrown on the grill. That's another fan favorite

Reading these...i'm starting to see why I'm a little short for my weight.
 
For a wild turkey, I have always had good results stuffing it with sweet Italian sausage, apple slices, lemon slices, and an onion. Then drape some bacon over the top and roast it while adding a bottle of German white wine for moisture. Makes the best Thanksgiving meal imaginable.
 
This is by far my favorite wild turkey recipe. It’s restaurant quality.


Brining breast, then smoking or boiling and shredding to make salad like you would chicken salad is also great.

My kids devour it Chic-Fil-A style - tenderize, soak in pickle juice, cut to sandwich or nugget size, throw it in flour, egg wash, then panko - chill in the fridge for 20 minutes and fry, just add sauce.
 
Enchillada's, Insta-pot the meat, shred it. A little olive oil and red Chile powder strained corn and black beans and cheese . Mix it together ,roll into tortilla's. put a little oil in a aluminum pan ( the cheap rectangular ones 9x13) encillada sauce on the bottom place the Enchillada's in the pan cover with sauce, bake covered at 350 for 30-40 minutes half way through uncover and cover with cheese finish and enjoy.
 
Here's a different one I came up with.

Braise the legs and thighs in beef stock. Drain, shred and remove all the bones.

Liberal coating of BBQ sauce, throw in some chipped pineapple.

Throw that on some Hawaiian rolls you toasted in butter with pickles and pickled onions.

Good luck having left overs.
