Venison Heart - Recipes?

I’m not much of a Rinella fan but this recipe is solid. The recipe also explains how to butterfly a heart into steaks which is ideal.


Backcountry guys, just butterfly into steaks, cut them into strips, salt and pepper and roast over the fire like a hot dog.
 
Soak in cold water with salt added in bowel stored in fridge for a day or two. Salt seems to help drawing out blood. Slice approximately 3/8” or so and trim away any of the crap. Season and cook with onions and olive oil in cast iron skillet.
 
I've reverse seared (smoke then grill) elk heart and it was really good. A friend of mine says he keeps venison heart in water in the fridge for about four days and then makes tacos with the meat, says they're delicious and I believe him.

I do the same with Venison heart. Definitely good stuff. Dont cook the beJesus out of it , medium at most.
