Cooking Moose

Well, now I guess I’ve eaten enough to have formed an opinion. Moose is better on the table than Whitetail Deer. That’s not something I say lightly. I REALLY like deer. So far I’ve eaten Moose burgers and made chili and stew. I’ve slow roasted it and pot roasted it. I’ve yet to have a bad moose meal. Overall, I’d say it’s milder and a bit sweeter than deer. Ironically perhaps, I’ve not done much steak yet. The bit I’ve done as steak has been real good. Any of you moose huntiing sharpshooters have special techniques or recipes that you prefer?

Moose burgers are my favorite. Tacos, enchiladas, burritos are great too. For steaks I like them medium rare sliced up with salad.

Never tried moose, we have about 5000 Shiras here. Love the idea of a moose hunt, but I wont even put in for the raffle unless I've tried it. I eat everything I hunt, would suck to find out i don't like it and need to eat thorough hundreds of pounds. What kind of moose do you hunt, and have you tried more than 1 species?

I agree 100%. Moose is fabulous!
I had a chef friend observe me cutting backstrap steaks and had me slice a thin piece off for him to try raw. I thought he was crazy until he urged me to do the same. It was delicious. After that I prepared tartar and served the moose like sushi w/ soy and wasabi. I know it's a bit out there, but it was great. I tried the same with whitetail and I won't do that again!

We like to grind in jalapeño peppers in some of the burger we make. Sweet Italian sausage is great. Don't over cook the steak

Wow that looks delicious. Meat doesn't look fatty either, I didn't know they were so lean.
Moose is the leanest wild game meat there is. It is also my very favorite. I don't use it in tacos/chili etc. I use deer and elk meat for that. Burgers, chops, and some jerky for moose.

Mine was the best tasting game meat I've ever eaten. A bit tough, but there's ways to overcome that. Sous Vide was my friend. I likened the flavor to grass fed beef. The burger was fabulous.

Alright I'm convinced, I need to find me a moose meat source and give it a go. I've done whitetail only 3 seasons in a row. My pops and I were talking about Elk this year and I like the idea of having moose prospects in the future after elk.

Remove roast from freezer and allow to thaw on a bread drying rack loosely covered in the fridge for 3-5 days. This allows some blood to drain.
Sous vide. Set it to 134 and place the bag with the moose roast in the water. I add salt, pepper, garlic, onions, rosemary and thyme. When everything else is ready I remove it from the bag, add a little more seasoning and put it under the broiler in the winter and on the bbq in the summer to give some texture. Amazing.

Problem is you have to spend $10K-$20K or more to hunt them in Canada or Alaska or wait 150 years to draw a tag in CONUS.

Yikes. We got them in Washington near where I hunt, but we do the raffle thing. Maybe if I believe really hard....

I got luckier than hell to just draw a cow tag 8 years ago for Mt. Spokane North. There's now a fraction of the tags available even since then. I don't ever expect to draw a bull tag in WA.

Moose meat is definitely the best out there! I'd rather eat moose meat over deer or elk any day of the week. No matter how you cook it, you can't go wrong. The only problem with moose meat is it's hard to get unless you live in Alaska or Canada.

Never had bad moose meat yet. From Colorado to Alaska.

Sweet and yummy.
The gf and I are having moose bacon cheeseburgers tonight for supper.

Fry the bacon, then fry the burger in the grease. Top with cheese, bacon and tomato.
