Cooking Moose

Well, now I guess I’ve eaten enough to have formed an opinion. Moose is better on the table than Whitetail Deer. That’s not something I say lightly. I REALLY like deer. So far I’ve eaten Moose burgers and made chili and stew. I’ve slow roasted it and pot roasted it. I’ve yet to have a bad moose meal. Overall, I’d say it’s milder and a bit sweeter than deer. Ironically perhaps, I’ve not done much steak yet. The bit I’ve done as steak has been real good. Any of you moose huntiing sharpshooters have special techniques or recipes that you prefer?

Moose burgers are my favorite. Tacos, enchiladas, burritos are great too. For steaks I like them medium rare sliced up with salad.

Never tried moose, we have about 5000 Shiras here. Love the idea of a moose hunt, but I wont even put in for the raffle unless I've tried it. I eat everything I hunt, would suck to find out i don't like it and need to eat thorough hundreds of pounds. What kind of moose do you hunt, and have you tried more than 1 species?

I agree 100%. Moose is fabulous!
I had a chef friend observe me cutting backstrap steaks and had me slice a thin piece off for him to try raw. I thought he was crazy until he urged me to do the same. It was delicious. After that I prepared tartar and served the moose like sushi w/ soy and wasabi. I know it's a bit out there, but it was great. I tried the same with whitetail and I won't do that again!

We like to grind in jalapeño peppers in some of the burger we make. Sweet Italian sausage is great. Don't over cook the steak
