Chili Makin’ - Beans or No?

Wyoming chili get 3 kinds of beans; dark red kidneys, light red kidneys and pinto beans.
Chili I make in Texas for family gets no beans unless they ask for them.

I cook in few chili cook offs down here every year, no beans allowed in Texas chili cook offs. Before the flood of Yankees and Californians took over down here we’d said really derogatory things about people who put beans in their chili - mostly things like “he’s a yankee” or “he’s a Californian” - as a kid my understanding was the only worse insult was “he’s a commie”. But, I’ve had some dang good chili & beans on many occasions. My vote is still no beans in the chili though…

Dark red kidney beans and a large can of refried beans.

The refired beans really thicken things up.

And obviously you need to serve it with cinnamon rolls, otherwise your not a Nebraskan!

I like red chili ether way, with or without beans, as long as it's good chili, I don't care.

I have to have red kidney beans in my Chili.

You say that. . . But next time you make chili your gonna glance at some cinnamon rolls and think to yourself "is there something to this?" And then you'll be back to thank me afterwards!

I-80 across Nebraska is like Flying over the Rockies and saying they weren't that big of a deal. If you want to see Nebraska some time Head up through the sand hills, check out the Niobrara river valley, over even head south out of Maxwell, NE and check out the canyons and hills there is pretty country, just not along the interstate!

Driving I-80 along the Platte river valley could almost be used as torture! And they refuse to raise the speed limit to 80 MPH which would be lovely from about the middle of the state west!

In my experience the entire state is: corn, corn, corn, boot barn, corn, corn, porn shack, corn, boot barn, corn, corn, corn, boot barn, corn, corn, TREE! corn, porn shack, corn, corn, corn, corn, corn, porn shack next to a boot barn, corn, corn, THE OTHER TREE! corn, corn, disappointing Cabelas, coooooooooooooooooooooorn, boot barn, corn, porn shack, Wyoming.

Here's something we tried tonight and really liked.

I took 4 venison shanks, cut them into 3'' chunks or so (like for osso bucco), browned them, and put them in the bottom of a crock pot with chili ingredients ( with pinto beans, in keeping with this thread) on top. It cooked all night last night on low. This morning I shredded and chopped the meat and removed the bones. We heated it up this evening and cleaned it out.

All that goodness from those bones makes an incredibly rich and hearty chili. I will definitely be making it again!

I'm enjoying this thread!

I like to get chiles from Heine's Market. They have a motorized roaster. A lot of the hand cranked roadside roasters spin the drum too fast, preventing the chiles from tumbling and getting an even char.

Instead of cubed pork, I usually get a pork butt and smoke it. Smoking the pork adds extra depth to the finished chile.

Almost chili making season and was wondering the consensus of beans or no beans in your chili?

If yes to beans, what kind?
I make it with and without. When I make it with I usually use a can of black beans and red kidney beans. It makes my venison chili more healthy by adding more protein and fiber and tastes good too.
