Caribou is great. Same friend that got the caribou always tells me that his wife won't eat any game but elk (sounds like a great excuse if you ask me).

I'm a little late jumping in here but I'm a FNG.

Bison
Elk
Moose
Whitetail
Caribou

On second thought, maybe mountain lion is my favorite. We do butterflied backstrap and it is truly awesome.

Don't care much for mule deer unless it is cooked all day in a crockpot with mushroom soup or cream of chicken soup.

I followed Rinellas recipe for pastrami half assedly on some duck breasts last year... they got ate in a hurry!!!

I’ve never had it but they guys I know who have say oryx is amazing.

The best meat I have ever eaten was New Mexico oryx. It was lean and cut like butter! If fish is considered game I also like fresh salmon and halibut! For birds it's tough to beat smoked turkey!

I disagree with everything above. It depends on Cow or Bull, & age. I now have a Cow Moose in my freezer. Definitely a mature cow. Bigger than usual. It's tough to eat, and doesn't follow the reputation that Moose meat has.

I have had Mature Cow Elk that were incredible. Sometimes it's the luck of the draw.

With Caribou, I know you cannot eat a Rut Caribou.
