Best wild game meat

I've had mule deer most of my life but had about a 5 year drought of not having any. Killed a buck this year in November and I dont know if my tastes have changed or if I just had so much mule deer that I got tired of it but Ill tell you what, it gives everything else a run for its money. I didnt have time to hang him at all...just processed, packaged and in the freezer the day after being shot.

Been eating wild game my whole life, but I haven't enjoyed anything as much as my first sheep (Dall). Here is a roast we had on Christmas Eve

In that order. All about personal taste. I've shot 1 caribou. I'd need to be starving to death to ever eat that again. It wasn't a meat care issue either. He fell where I shot him on the last morning of the hunt. Immediately quartered and put on ice and into the plane.
Was it in the rut? Late season caribou bull shouldn’t be shot for meat. It’s ruined.

Yup. I’ve never killed one past the first couple days of September and they’ve all been good. Not my favorite wild game meat, but I would consider good none the less.

Texas. It’s a real challenge with a bow, great practice for spot & stalk elk hunting. A lot of the bullet manufacturers will test out their new designs on Nilgai. They are one tough critter and the meat is amazing.
