I’m amazed at how many folks still field dress game. Guess everyone’s situation is different but out of the last 150 or so, I’ve gutted zero.

It’s to each his own, but the liver is nothing like beef liver. It’s more mild tasting. Steve Rinella talked about how to dart venison heart. You wrap the heart in caul fat and grill it. It’s fantastic and makes digging through guts worthwhile.
