Couple of things....
That contraption to the right of the air fryer is a fry press I bought off'a eBay for about twenty bucks shipped. It weighs a ton so the profit margin was probably thin for that seller. But the fry press is a 'must-have' for the best homemade fries.
Pop a tater with the end lobbed off in that thing (flat end facing grate) and yank the lever....instant fries.
Toss them in a ziplock bag with vegatable oil, grated parmessan, tajin seasoning and pepper. Dump seasoned raw fries into air fryer for about 15 minutes.
I try to not ever keep anything in the freezer longer than a year so I've been making a lot of bear this week. We finished up last year's bear with braised shanks over rice.
