What would be the best way to go about getting into Sheep hunting in 2025, assuming you were starting out fresh today?

Not a bad plan. Mountain Goat hunts have only gone up 3-5x vs. 10x of the sheep hunts. Lot different hunt though, the sick factor increase greatly and the goat horns are not quite the same reward.

What's the sick factor, elevation sickness?

I swear I fixed that…SUCK…almost universally mountain goat hunts are in much more demanding terrain. 1/2 the time I see them I thank God that I have one and don’t need another…sheep I have a LOT of want still.

Goat hunts were more of a one and done hunt for you?

Do the most physically demanding and most expensive hunts as soon as you can while you are still physically able to do them.
Decide WHAT animal YOU desire the most, and make a commitment to make it happen. Where there is a will, there is a way to make it happen.
