Resurrecting an old thread but I'd like to hear more about removing the ribs with a knife. Can you describe it or point me to a video?The ribs don't need to be sawed off. They have joints on both ends. Once you find them you can remove them pretty quick and don't have sharp edges
If i am at a place the ribs have to come out i have used a wyoming saw although i honestly think a small stanley carpentry saw maybe better.I did a bunch of moose with replaceable blade Outdoor Edge knives but my Bark River Gunny Hunter convex is simply amazing and my 6 in boning Victorinox is also outstanding for boning & skinning. That tip was from Billy Molls.

Yeah a Milwaukee saw with a charged up battery is tough to beat.We used a battery operated sawsall on the ribs and legs last weekend and I’m sold. Don’t think I’ll be moose hunting without one again.
