I will be starting my New Years diet on Monday - just doesn't seem right to start one on a weekend so we are loading up:

Cajun chicken pasta
French Gruyere chicken and
Pizza

to round off the weekend.

Smoked prime New York loin, smoked brie and a big ass salad :) Smoked prime brisket was last week and leftovers are gone :(

Appetizer- Teal poppers (small slice of bell pepper, sliver of teal breast, sliver of jalapeno, greek yogurt, all wrapped in bacon and grilled). Main course- Medium rare, reverse seared, Elk Back Strap, grilled garlic/rosemary asparagus, loaded baked potato. Desert- Screw Ball Whisky on the rocks. Happy New Years

Just finished up a big pot of venison burgundy stew. I don’t use real burgundy... TJ’s 3 buck chuck is just fine. Serve with a big slice of sourdough and a glass of red wine or beer. Yuuummmmm

Had an elk burger for lunch

Chicken taco soup tonight.

Desert is homemade apple pie and huckleberry pie.

Former neighbor had trouble getting her orchard picked this year due to Covid so I made off like a bandit and have a half freezer full of apples and made 150 gallons of applesauce.

I was never a fan of applesauce until we started making it into homemade pop sickles. Kids love them but I honestly do as well. Hot summer day and apple pop sickles are awesome. You might give it a try if you are looking for uses.

Pork Butt. Couldn’t have turned out better. Super tender and juicy . And some homemade slaw to go with it. Delicious as well.

Homemade pizza, including the dough. First one was thinly sliced tomato, a little sauce, hard salami and shredded cheese. Second was diced bacon, goat cheese, thinly sliced leek, little sauce and shredded cheese. Number three was wild turkey sausage, thinly sliced leek, and shredded cheese. Last one was sauteed pepprs, sliced leek, sliced tomato, goat cheese, broccoli and shredded cheese.

Washed it all down with some beer. We are stuffed.
