We've done, sliced, battered and fried and wrapped with jalapeno, cream cheese and bacon on the grill.

I usually do the same as sndmn.

The best one I ever did was slow smoked up to temp. Then, sliced and seared hot.

Pickled deer heart is my favorite.
If you want something a little different, do this. I par boil the heart until tenderized a bit. Then slice it thin and use a 50-50 vinegar and water brine, add a teaspoon of salt per quart jar (or to taste), some raw onion and a 1/2 tsp of pickling spice. It's best if let sit in the fridge for a couple weeks.

Crock pot with some sliced onion till done, remove and cool slice thin some good German rye bread thin sliced heart Inglehoffer stone ground mustard quality Swiss cheese and few slices of raw onion very good samwich but usually there isn’t enough heart to fool with.

Season and frying pan is how I've done it.

Any other pickling recipes out there? Never tried that…
