How is everyone keeping sex ID on quarters or boned out meat?

Specifically to Colorado.

Rules say you have to leave "the parts" attached but I really don't want "parts" touching my meat.

I will bring a gallon sized ziploc and on the quarter that I leave the package attached to, put inside ziploc and seal as far as I can and tape if you have it. This has worked for me keeping them off the quarter. Wish they didnt have to be attached, then I could just castrate and place in zip loc and toss in trash once home or to meat processor.

I leave a small portion of the penis attached where it runs between the hams and attaches to the pelvis. You only need a little bit. If it's a cow, I just leave a portion of the udder attached.

If you're worried about it touching the meat, put a sandwich baggie over it and tape it up. I've never worried about it.

It's easy enough to skin out the parts or a portion and leave it attached to the rear quarter. Not exactly sure what sort of contamination you're worried about, but it's all harmless.... heck testicle fried in butter ain't bad eats according to some.

The junk is already touching the meat..I mean it's already attached. Haha

Just skin it and leave the bare sac attached..

There's an episode of Rinella's show where he skinned the ball sack, leaving one skinned testical attached to the meat, which was pretty smart.

Yup, I would suggest cutting down between and try to leave both on though since they aren't held on my much at that point. Insurance in case the one you planned to leave on gets cut or detaches on accident.
