Pork fat vs beef fat

I have been using pork fat for summer sausage and Italian sausage for the past 5 years. Today I met a restaurant owner who swears that beef fat adds more flavor to home made sausage. I’m looking for comments from anyone who has first hand experience adding beef fat. Thanks

yes I used to strictly use pork fat but have since switched to beef fat. I have used it with deer, elk, bear and antelope. I am usually making burger meat or ground breakfast sausage and italian sausage. This is all loose ground, not stuffed in casings.

As for flavor I definitely would agree it is better than pork. The fat from beef which is red meat goes well with the red meat of wild game.

Beef fat tends to be more beefy, so when you use it with wild game, it can overpower the flavor. Pork fat tends to be more neutral. Both work, just depends on your own taste preferences.

If you’re feeding people who don’t “like the taste” of game, beef might be a better option.

Sausage pork fat, for ground I use beef fat. Use what you like the most. Pork or beef the % used is the most important thing.

I’ve used both. I tend to gravitate towards beef for regular ground as it makes it taste very close to beef. I can feed it to anyone interchangeably and they don’t notice. For sausage I prefer pork fat though. As previously stated it’s more neutral and I think it lets the sausage seasoning shine more.

I find beef fat to be abit chalky in taste, at least the last time I used it. That said I'll use whatever I can get.
