Full body mount is the only way to go with a goat. Just my $.02 but I just finished looking at all of them in this thread and it confirmed it for me.
You all have taken some beautiful goats, of that there is no doubt, but for myself where I will only get one in my lifetime...full body or bust.

And with that thought process, no one can blame you. But for those of us who are on the one goat/year cycle. It’s not really a thing. I’ll probably start tanning the hides and selling them after a few more. It’ll take a really special goat to top my last one. Goats are just too awesome. I’m super appreciative to be able to hunt them every fall.

Haven't seen too many shoulder/wallpedestal/half mounts that I have loved either. Lot's of great taxidermy, but they never look as good as a ram. Always find the legs look off in a half mount.
I've had several clients want me to cut their goat hides in half for a shoulder or half, and I just won't do it. I tell them all to lifesize - easy to say when it's not your taxidermy bill - but at least if they do cut them down the road I can't take any blame for it. Throw rugs are a great option if you aren't keen on mounting.
How much are you charging for full mounts?
Always felt Mt. Goat and Muskox looked weird as a shoulder mount. Full mount looks great, but can be pricey and folks may not have the space. Seen some nice pedestal mounts that have some extra length added to the back to include the hump and shoulders that have looked good.
