Man I’d like to think I’m a bit of a cook but clearly I need to up my game. Looks great.

I gave up on cooking after seeing his posts, back to top ramen and tuna for me!

Oh c'mon guys. There's nothing difficult about most of the dishes I post. That chicken dish takes about 15 mins. to make once you have the ingredients ready to roll. Then it's just a matter of...

I wasn't feeling too chipper last night, so I skipped dinner. So here's one from the archives on how I prepare my meatballs...

I started off with 6 lbs. of 80% lean beef, split it into two equal parts via my digital scale & folded in 1 lb. of ground pork into each portion of beef. A 1 lb. container of Italian bread crumbs was divided in two & added. Next came the chopped garlic, onions and parsley, also split evenly and mixed in each meat portion.

I then used a couple tbps. of olive oil as a vehicle to hold sea salt, coarse blk. pepper, thyme, oregano, rosemary, bay leaves & crushed red pepper -- all blended with a hand-held mixer thingie. I added 1/2 portions of the seasoning mix to each meat portion. Once that was done, I combined all of the meat into one large stainless bowl for thorough mixing together. An ice cream scoop helped me form the resulting concoction into somewhat round lumps. I first seared them in a frying pan and finished them in the oven to become 8 lbs of tasty meatballs -- i.e. 58 total -- like my Italian grandma always made.

Ha ha, someone needs to balance this out! Lunch of champions!

But I did just mention to my wife the other day I wanted a filet with a good peppercorn sauce. That pic above with the peppercorn steak reminded me! Chicken looks great too!

Nothing wrong with good ol' dogs on a bun. As seen above, we did the same Mon. night.
