6mm Creedmoor. Has been my best friend the past two hunting seasons. Plenty of impressive kills.

Under those guidlines, I'd go 243 Win and 300 WM. Personally, I through the 7x57 in the middle, just for some panache!

Going to have to go with the .308

It has a myriad of loadings for almost every type of hunting. Every rifle manufacturer of note makes a rifle in that caliber so you will find a match for your self. Recoil borders on heavy (for us weaklings) but is absolutely manageable (even for us weaklings). Can be found in almost any shop that sells ammunition. Ballistics are so well tested, documented and applied to so many platforms that it is easy to dial in .308 to your rifle / scope combo without going through too many frustrating 'experimenting' pains.
Also.... despite the newer and more technologically advanced rounds coming out... it still works and will continue doing so.

I'm a big fan of the .280 AI and almost exclusively use it on every single hunt now. Throwing Hornady GMXs, I have found it to be bad medicine on everything from pronghorn to bighorn sheep to elk. I'm curious about the cartridges Nosler has been building. The 28 Nosler looks pretty sexy on paper.

If I had to pick only one it'd 7SAUM for me, it's my personal multi-purpose hunting cartridge.

You have shot a lot, tested many, come to firm conclusions and are thinning out your gun herd to two only because your better half said so.
When it is all said and done what two rifles would you build? What two calibers would you choose? Is there one that you feel does both well?

CXP2 class game are generally light framed animals with relatively thin skin and light muscles and bones. These are primarily deer, antelope, sheep, goats and black bear. They typically range from about 51 pounds to perhaps 300 pounds.

CXP3 class game are large framed, heavy animals with tough skin, heavy muscle tissue and large bones. Would guess that these animals range from 301 to over 1000 pounds, and would be represented by such game as alg, elk, moose, zebra, kudu, eland, and brown bear.
My favorite caliber is 30 caliber, with the 30-06 and 308win being my 2 favorite cartridges.

I have thought a lot about this over the last year- These 2 will do everything I will ever need (and well)
300 WM
6.5 Creedmoor (manbun, ass-hat, douche-canoe) whatever we're calling it now- it shoots.

As I'm considering building a 300 PRC as we speak

- 30-06 if I could only have one caliber for the rest of my days due to versatility of the caliber with bullet weights when handloading.
- 308 - my most accurate rifle is chambered in this, have pulled off some nice shots with this rifle. So hence the fondness of the caliber.

So... How about you keep just 2 at your house and store the rest at your buddies house? That way you don't have to completely thin the herd. Too many caliber choices....

22-250 or 243 and then 280ai or 7mag or 300wm
