I finally broke down and picked up an Edge Pro....
What put me over the edge was seeing some tests with the different setups and photos of the different edges through a microscope...wow, what a difference a good polished edge can make. Some systems and techniques tear at the bevel never fully refining it.
I spoke with the owner Ben on the phone...he was a pleasure to talk to. He made a good point, its pretty easy to get an edge very sharp with a guided system....but refining that edge with progressively finer stones is what really makes the difference.
I have seen the knock off versions on Amazon....glad I went with the USA made version...a high quality unit.
Holy smokes what a difference in my knives! I've always known a guided system can put a good edge on as I have used the Gatco system for years. The fine tune-ability of this edge pro is fantastic. Then the finer stones just put polish that edge to a mirror finish making them scary sharp.
A tip; You don't need much pressure with this system....very little to none. The stones you want to have just enough pressure to feel the stone grabbing the burr [maybe a couple pounds of pressure is all- almost nothing] The diamond stones need nothing....just the weight of the arm is all.
This thing sharpens S30v like its nuthin. I used it on my very difficult steels; Elmax, PMA 11, S20v and S90v- same thing....mirror polish....and a crazy sharp edge that just wasn't right with other systems.
Ben said as much, something like 80% of their customers own another knife sharpening system before buying his.
