Small Game:
Squirrel -makes unsurpassed gravy
Rabbit

Reptiles/amphibians
Bullfrog -deep fry
Turtle
Gator
Iguana

Pheasant
Spruce Grouse
Quail
Teal
Dove (tacos!)

Another vote in for Axis deer. Shot one in Texas this winter and it's terrific. Elk is up there on my list as well. Have not had sheep.

Most things made of meat are good, especially when well cared for and prepared appropriately.

Turf: Elk, black bear; blacktail.
Surf: blackcod, yellow tail, lingcod, razor clams, squid.

Hope to hunt/eat someday: bighorn, oryx, Mt. Lion.

My favorite has to be an acorn fed Appalachian Whitetail.
I've had Oryx, not bad - just so mild had very little flavor.
Just discovered Javelina makes some awesome fajitas.
I do love me a Bison steak or Burger.
Cottontail has to be the best small game.
Common Gallinule breasted out and pounded flat, fried is dang good.
Havent had a Bobwhite in so long I cant remember what they taste like.
Got some Aoudad in the freezer I havent tried yet.
Fish: Love to catch me a mess of Bluegill and fry em up.
Mangrove Snapper ranks near the top.
And IMO the best of all, Fresh caught AK. Halibut. !!!!

Wild sheep, whether it be bighorn or dall, is at the top for me. I've eaten a couple mtn goats and it's been my least favorite until last year. This last billy lived in the same conditions, was killed the same time of year, had more bullets put through, fell further and would rival, if not top any piece of red meat I've ever eaten. Definitely makes a guy think twice about judging a species taste before he tries multiple.

Oh and one time I shot a 9 month old Columbia blacktail. Better than any other game meat I've ever had.

We mostly have grays out west here. I suspect any typical recipe for such would do the trick, but here's one I like:

Wild turkey breast sliced thin across the grain and grilled is my favorite of all!
