Anything to do near Dallas in May?

I’m going to be in Dallas in mid-May for work, I can add a day or two for something fun if it’s worth it but I’m a MT guy and don’t know Texas, having only been to Houston, so looking for input.

Anything worthwhile to do in May within a reasonable distance of Dallas?
So are you going to actually be in Dallas or the Dallas area(DFW) ?
Narrows down some things to do if you're not staying right in Dallas.

You might call the guys at Defensive Arms Academy and go shoot some machineguns. Great guys.

I’ll be there mid May also, anyone with recommendations for solid public golf courses feel free to share the locations please. I promise to fill in all the damage I do in the one fairway that I hit.

I’m staying at the Sheraton Dallas Hotel

That is near downtown.
DFW airport is more Grapevine and Irving.
Good golfing around Grapevine area, Bear Creek, Cowboys Golf Club, Grapevine Municipal.
Guided fishing on Grapevine, Lewisville and Ray Roberts.
Grapevine has ton of good restaurants. La Hacienda Ranch for Tex Mex, Los Amigos for local Tex Mex, Perry's for steaks or their pork chop.
Ft Worth would be worth seeing, maybe take the train over for the day.

I've been there a few times for work, and the one thing I recommend is having dinner at III Forks. Probably the best steakhouse I've ever been to.
