I can get one done in 2 days by myself but I usually let it spread into 3 days, especially with making some sausages and things. Probably 18 hours or so start to finish. My elk area always quartered in the field but I generally leave them bone in unless its a LONG hike out. I've only de-boned a couple of em over the years. I'm sort of new to butchering it myself (last 3-4 years or so) but I've come to really enjoy the process. Having a good BIG grinder and a good knife sharpener go a long ways to making it more enjoyable.
