A very American Southwest thing, but I love Javelina hunting. Just big enough to justify taking the day off - small enough you can hike it out yourself with ease and have it all packed up the day you get it, easy hunting with a call and a bit of experience.

First time playing with a sousvide.
Gave them 10hrs @160, rolled them in some seasoned flour and gave them 4 min on one side and 3 on the other in some bacon grease in a cast iron skillet.
