Moose Brisket

The smoking of pastrami will help make it more tender. Standard corned beef will work well if you remember to add plenty of oil/fat when cooking.
 
Moose brisket sounds like a treat man. I made a smoked moose brisket sandwich with Horseradish sauce and it was really delicious. I really think you should try that as well.
 
Pressure cook that bad boy for 35 min then smoke it, then grind it then send it to me...I'll properly dispose of it!
 
I’ve braised several elk briskets, one of my favorite cuts of any big animal. I’ve also smoked a couple. Patience is the main ingredient
 
I had a fine looking brisket off my wife’s moose last fall. I was so curious and it looked so good. I took it to a local guy who runs a meat store and smoker. He used a good amount of bacon on it but it turned out as fine as about any beef brisket I’ve ever had. I know what I’ll be doing with any future moose briskets.
