Moose brisket sounds like a treat man. I made a smoked moose brisket sandwich with Horseradish sauce and it was really delicious. I really think you should try that as well.
I had a fine looking brisket off my wife’s moose last fall. I was so curious and it looked so good. I took it to a local guy who runs a meat store and smoker. He used a good amount of bacon on it but it turned out as fine as about any beef brisket I’ve ever had. I know what I’ll be doing with any future moose briskets.
