Yup thats accurate..10% = 4 ½ lb. venison, ½ lb. fat
20% = 4 lb. venison, 1 lb. fat
this look accurate. i heard use fat back bacon, or pork fat back to add. ??
Save your money and buy pork or beef belly if you can't find straight fat trimmings. The raw bellies are roughly 75% fat
