meat to fat grind ratio

10% = 4 ½ lb. venison, ½ lb. fat

20% = 4 lb. venison, 1 lb. fat

this look accurate. i heard use fat back bacon, or pork fat back to add. ??
Yup thats accurate..

Save your money and buy pork or beef belly if you can't find straight fat trimmings. The raw bellies are roughly 75% fat

Or just get it for free from your local processor. Many processors just give it away if you ask nice.
