Crossbow Venison Chili (Serves 6–8)
Ingredients
Venison
- 2 lb ground or finely diced venison (shoulder or trim works great)
- 2 Tbsp olive oil or bacon fat
- 1 tsp kosher salt
- 1/2 tsp black pepper
Aromatics & Base
- 1 large onion, diced
- 1 red bell pepper, diced
- 1 jalapeño, minced (seeded if you prefer mild)
- 4 cloves garlic, minced
- 2 Tbsp tomato paste
- 1 (14–15 oz) can crushed tomatoes
- 1 (14–15 oz) can fire-roasted diced tomatoes
- 2 cups beef broth (or venison stock, if you have it)
- 1 Tbsp Worcestershire sauce
- 1 tsp cocoa powder (optional, for richness)
- 1 tsp brown sugar or maple syrup (optional — balances acidity)
Beans (optional — add or skip to taste)
- 1 can kidney beans, drained and rinsed
- 1 can pinto or black beans, drained and rinsed
Spice Blend
- 2 Tbsp chili powder
- 2 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp ground coriander
- 1/4–1/2 tsp cayenne (to taste)
- 1 bay leaf
Finish
- Salt & pepper to taste
- Juice of 1/2 lime
- Toppings: sour cream, shredded cheese, chopped cilantro, sliced scallions, crushed tortilla chips
Instructions
- Brown the venison
- Heat a large Dutch oven over medium-high.
- Add oil, then venison. Season with salt and pepper.
- Cook 6–8 minutes, breaking into pieces (or searing diced cubes) until just browned.
Tip: Venison is lean — don’t overcook at this stage or it can dry out.- Transfer to a bowl (leave a little fat in the pot).
- Build the flavor base
- Add onion and bell pepper to the pot. Cook 5–7 minutes until softened and lightly golden.
- Stir in jalapeño and garlic; cook 1 minute until fragrant.
- Add tomato paste and cook 2 more minutes, letting it darken slightly.
- Spice it up
- Stir in chili powder, cumin, smoked paprika, oregano, coriander, and cayenne.
- Toast the spices 30–45 seconds.
- Simmer
- Return venison to the pot.
- Add crushed tomatoes, diced tomatoes, broth, Worcestershire, cocoa (if using), sugar/maple, and bay leaf.
- Bring to a gentle simmer, then reduce heat to low.
- Cover partially and cook 60–90 minutes, stirring occasionally, until thick and flavorful. Add splashes of broth if it gets too thick.
- Add beans & finish
- Stir in beans for the last 15–20 minutes (skip if you prefer no beans).
- Remove bay leaf. Add lime juice. Taste and adjust salt, pepper, and heat.
- Serve
- Ladle into bowls and top as you like. Even better the next day.
