I've been seeing alot of grey squirrels around lately wondering how they might taste. Anyone have experience or recipes ?

They taste good. Just have to cook them low and slow so they are tender. Lots of recipe options.

From what I’ve been reading the insta pot is a good way to go. I’m not seeing many here in North Alabama.

They are very good. I equate them to dark meat chicken. As noted, they can be tough if not cooked low and slow. We've also used the instapot as an initial tenderizer and then cook them the traditional fried/braised method. Don't forget the gravy at the end of the process to make it the perfect meal.

I've also slow cooked them in broth, then pick all the meat off the bones. You can use that meat in any number of recipes. I do this also with rabbits, pheasants and chukars. Gumbo and jambalaya are a couple of my favorites with small game meat.

Grey squirrels are the main squirrels getting eaten in the Ozarks and Appalachia. They taste great! Cook them the way you’d cook tougher fowl/poultry

Used to cook them in the crock pot when I was a young teen and just got into hunting. They tasted like chicken.

Used to bow hunt for deer in the morning, squirrel hunt during the mid day, and then go back out and deer hunt in the evenings.

Haven’t done that in many years!

My neighbor and best friend gave me a mess of very fresh, cleaned, dressed and quartered squirrels ! About a pound and a half! He said roll them in a flower, pepper mixture and cook them on medium to low in butter! It tasted great! Don’t know what kind of squirrels they were! C don’t think they were gray squirrels:)
