Chicken thighs

Seasoning of your choice. In the smoker at 200 until an internal of 150 then bring the smoker up to 300 until an internal of 180. Dip of your choice

Some of the juicest chicken I've had.
 
St Louis is my favorite. That's all I do now. I think they rock over baby backs. It is all I buy now. Costco is the bomb.
Oh for sure! I tend to get mine from Kroger when they run a buy a rack get a rack free sale. Just have to sort through some duds to find a good one.
 
Had a guy tell me the other day how good this was - smoked eggs in the shell and then made egg salad. Somebody please try this and tell me how good it is!
Dang, I read about this one time but never tried it. Do you know if he put the raw eggs in the smoker or were they hard boiled already?

He told me he put them in raw in the shell at about 225 for 2 hours, rotating them at the 1 hour mark. Sounded like a long time to me...

It’s easy and worth it. I think they peel better than a hard boiled egg. The shell helps block off some of the smoke flavor so it’s not over powering.

And a turkey

Traeger pellet smoker. I know enough to know I want an actual wood smoker. None of this has that actual “wood smell or taste”

Try smoking pecan pellets. I use an offset smoker and have not used a pellet smoker but I use the pellets in a smoke tube when I cold smoke something.

Two guys and a cooler has a YouTube video on this. He tried different methods to find out what works. I don't remember which way he went and I haven't tried it but it's worth watching if you're interested in it.
 
Ive got a batch of pickled eggs I’m waiting to try. After I hard boiled em and pealed em , I put em in the smoker for 45 mins and then into my brine. Looking forward to trying them.
