Elk Roast-would you eat?

Do you guys have any experience with freezer burnt meat? I’m planning to make birria tacos with this elk roast in the crock pot, but when I unwrapped it, the appearance was a little off-putting. I’m okay with a little freezer burn, but some areas had deep freezer burn. The entire outside was somewhat brown, with a few darker spots. Some sections were also very dry, which I suspect was where the silver skin had become freezer burned. I trimmed quite a bit off, and once the outer layer was removed, the meat underneath looked like normal elk meat.

There was no foul smell — it just smelled like elk meat. It was frozen once and was never thawed and refrozen. The elk was harvested in December 2023

Birria/crockpot is the perfect cooking method for that meat. I wouldn't overdo the trimming but since we also eat with our eyes I would remove any real ugly stuff that will stick in your head while eating a taco.
 
If you are briaising/slow cooking, you can get away with some mild freezer burn. as mentioned above, trim what appears to be actual damage.
