Elk Jerky Recipe

Jim Melton's Jerky Marinade is the easy button. Other than that I wing it with various teriyaki recipes I stumble across online.
 
check out Hank Shaw’s chipotle venison jerky. I use this recipe with elk and it’s great. I do reduce the soy sauce amount a bit since otherwise I find it overpowering.

Hi Mountain mixes out of Wyoming both make excellent jerky seasoning mixes. Hard to go wrong with either.
 
What is everyone's secrete elk jerky seasoning?
Here's my "secret" elk jerky recipe- Don't tell anyone

1/2 cup soy sauce

1/2 cup Worcestershire sauce

2 teaspoons Accent powder

2 teaspoons seasoned salt

2 teaspoons onion powder

1 teaspoon black pepper

1 teaspoon garlic powder


Mix everything and let the meat marinate at least overnight, 2 days is better.

I usually cut the meat into 1/2 inch strips, and let it soak in ice water overnight. If the water gets really red (bloody) I change it. After soaking the meat, drain it to remove as much water as possible. I take a clean towel and put it on the countertop. Lay the pieces of meat on it to dry it as much as possible. The extra water will dilute the marinate solution if you don't dry the meat first. Marinate the meat in the fridge at least overnight. Drain it when it is ready and hang on toothpicks in the oven with tons of papertowels in the bottom to catch the drips. After it has dripped dry (about 1 hour) remove the paper towels and turn the oven on to 150 (warm cycle in my oven). Heat for about 5 hours or until it is done to your liking.

I have been using this recipe forever, my son uses it, and now my grandson uses it.
