I know you meant that you have taken them apart with just that knife... just couldn't resist!
Victorinox Swiss Army Hunter. I've taken a lot of deer, elk and pronghorns with just that knife. Easy to sharpen, too. The old traditional red one or the new orange one, both work.
i have the green one and used long time ago on roe deer and chamois. never had it while taking big game except one caribou and of course the right tool for it as well.
 
I was curious about the weight of just the bivy.
Thinking about keeping condensation off a bag in a tent or skip the tent all together. Thanks.
Consider using just the bivy and tent fly to save on space and weight. Also, the bivy can help retain body heat so a lighter weight sleeping bag may also be a good option depending on conditions.
These are awesome. Every time Ive looked for them they seem to be quite pricey on eBay. Any other direction on finding one for cheap?
Honestly, I think you're best bet will be to try checking marketplace or a surplus store near a military base 😅

I have two of the US Army goretex bivy's , they weigh right around two pounds. Like most surplus gear really tough and heavy. I have used one a fair bit, but do not carry it when backpack hunting.
