Maybe only one or two.

Biggest question is are they adjustable for bag size? I tend to make a lot of jerky/snack sticks out of game meat and like to make small packages with 3-4oz of meat. Can I use different sized bags? A smaller bag for snacks and a bigger bag for family sized portions?
.
Any other advice, recommendations or thoughts are appreciated.

Shopping the Vevor or Meat! Brands at the moment and trying to stay at the lower end of the price range. Maybe 400ish max

The maximum bag size depends on the size of the chamber vac. You can use smaller bags though. I run a couple different sizes in mine. I picked up a Vevor based on numerous good reviews and have had it for a few years with no issues yet.

As long as it fits on the sealing bar and isn’t bigger than the chamber and you can use a lot of different sizes of bags. Some chambers allow you to remove some of the chamber trays to allow for a bigger bag. I have two commercial size vac sealers. One seals one bag at a time and the other seals about 8 at time or 16 in two cycles depending on the size of the bag.

Take a look at JVR. After a lot if research this is what I am down to. Their customer service seems great. I believe they are located in Buffalo. Give them a call and ask questions.
