Can you realistically fight off a 100+lb dog or are you going to lose?

Saw a video one time of a guy with his arm messed up in a cast all the way to his shoulder. He got attacked by a German Shepherd. It took hold of his good arm. It mauled him for a while. When he understood he was on his own. He flipped it over on its back and started bitting its throat with his teeth. He killed it.
 
My wife worked as a vet tech and she’s been bitten twice by dogs, both times were German shepherds that were brought into their clinics. The first one latched onto her bicep during an examination, it tried to bite another tech but my wife pushed her out of the way and got bit instead. That was before we met and it left 4 puncture wounds in her arm.

The second time the dog was fine for the exam and the vaccines until suddenly it snapped at the vet and then at my wife. She was able to get her head back quick enough that it barely grazed her cheek and her nose, had she been slower it probably would have taken her eye and got a fang into her temple. After that she refused to hold the animals anymore so she hasn’t been bitten since though a couple of her coworker have and they did have a pit attack a 10 week old beagle puppy in line.

Just recently they had a lady bring in “her” cat that was actually a stray, they found that out when trying to get it out of the crate it bit the lady, two of the techs and escaped to hide in the tractor supply for several weeks. The lady left it and refused to pick it up when it was finally caught.
 
I’ve been training MMA for 15 years and used to compete when I was younger. I want absolutely no part of fighting a dog hand to hand.
When I worked at UPS I learned that if you tell an aggressive dog “SIT!” you can sometimes buy yourself time to get back to the truck.
Another time I was trying to claim a man’s body for the coroner’s office and had to pepper spray a large lab mix that was being protective of his deceased owner. That works really effectively and I recommend it for a number of social and legal reasons.
Dogs have been used in war and police work for a long time, and are terrifying for good reason.
Of course I think I’d win though.
 
Could I fight off a 100# dog... yes.. Do i want to? No. Certainly not getting out that unscathed. Once a dog breaks ~60# kicking and punching tactics likely need to change to detain/choke/crush/kill. 100#+ no thanks. 2-150# pitbulls can stretch out a 1400# cow... Hard stop
