I have hunted and killed many of NC Whitetail deer. Everyone has provided their recommendations but I will tell you what works best. Buy your husband a Ghillie Suit and he can hunt with what ever suits the weather or time. I have wore everything underneath from pajama's, sweats work cloth Sitka gear etc. Just make sure everything worn is washed scent free.
A man can always use a nice pocket knife, one that could even do double duty dressing out a deer! Benchmade and Buck both make nice knives made here in the USA! Some of the Buck knives are not USA made and I pass on those. Here are a couple really good ones.
Benchmade mini-Barrage - It's about $118.00 but if you upgrade and get the G10 handle which I like because of the feel and added heft, it runs about $150.00. Have his name engraved on the blade to make it a little extra special!! A buddy just bought one with the plain black handle and it was $118.00 in the store (not on sale.).
A good set of binoculars would be great also. For his hunting a pair of 8x30 Zeiss Conquests would be great as would 8x30 Leica Ultravids. I use a pair of 10x25 Leica Ultravids and love them. Light and very clear sharp images.
Awe heck check these knives out also. I have two of them! Ruana knives made here in Bonner Montana. Very nice useable knives.
The steel head is one I own. It has the elk-antler handle.
Also look at Skre hunting clothing. I have both the Kuiu attack pants and Skre's version. Both are nice and I do wear them in the tree stand here in KY along with other Skre and Kuiu gear. The long sleeve shirts from skre are supper nice and I plan on getting a few more.
Might also look at items that have multiple uses, not just for hunting. Since you have some new land, he is going to want to do some improvements to it I'm sure. Might look at a pole saw for clearing shooting lanes, a disk or tiller for making food plots, trail cameras to monitor/watch the land etc.
